From Huila’s towns of Pitalito, Timaná, Oporapa, Palestina, and Saladoblanco, this lot is cultivated by smallholder farmers growing Bourbon varietals.
The Process
It is washed (wet‑processed) and covered sun‑dried, a method that balances clarity with rustic sweetness.
The Cup
Expect red fruit sweetness, peach syrup, dark berry flavors, cocoa powder, molasses, prune, and a slight winey note. Medium roasts highlight bittersweet cocoa and molasses, while lighter roasts emphasize juicy berry tones.
